Cellulase from Aspergillus niger catalyzes the hydrolysis of endo-1,4-β-D-glycosidic linkages in cellulose, lichenin, barley glucan, and the cellooligosaccharides cellotriose to cellohexaose. It does not cleave cellobiose or p-nitrophenyl-β-D-glucoside. This enzyme will also cleave intact glycosaminoglycan from a core peptide by hydrolyzing the xylosyl serine linkage. Cellulase is mainly for commercial food processing in coffee. It performs hydrolysis of cellulose during drying of beans. cellulases are widely used in textile industry, laundry detergents, pulp and paper industry for various purposes and they are even used for pharmaceutical applications. Cellulase is used in the fermentation of biomass into biofuels.

Invertase from Aspergillus Niger. Invertase is an enzyme that catalyzes the hydrolysis of sucrose (table sugar) into fructose and glucose. Invertases hydrolyze sucrose to give the same mixture of glucose and fructose. Invertases cleave the O-C (fructose) bond, whereas the cleave the O-C(glucose) bond.
Optimal temperature at which the rate of reaction is at its greatest is 60 °C and an optimum pH of 4.5. Typically, sugar is inverted with sulfuric acid.
